Mums Spag Bol
500g beef mince
1 onion chopped fine
About 2-3 garlic cloves chopped fine
1tsp brown sugar
1/4 -1/2 tsp dried chili flakes (optional) or 1/2 a fresh chili
2 tins of chopped tomatoes (or one jar of tomato passata 700g)
About 1/4 cup tomato paste
Lots of veggies:
2 carrots chopped
1/2 capsicum chopped
Mushrooms chopped
2 sticks celery chopped
1 zucchini chopped
1TBS dried mixed herbs or about 1/4 - 1/2 cup fresh herbs. (If using fresh I use Basel and parsley)
These are all the veggies I use, but sometimes I don't have all of them. I like to have at least 3 different types
In a medium sausepan/pot add a splash of olive oil heat over medium heat add onion and garlic cook for 5 mins then add brown sugar cook about 5mins. Add beef and stir till brown. Mix in chili, add veggies cook for a few mins then add tomato sauce and paste. If using dried herbs add now. I usually cook on low for about one hour stirring every so often. If using fresh herbs add towards the end of cooking. Cook your spaghetti in boiling water and serve spaghetti sauce with freshly grated Parmesan cheese. Yum enjoy love mum xox
